Yerba mate Ivu Organica Tradicional 500 g
Another new arrival - one we have known for several years and have finally managed to add to our extensive range. We travel to the province of Misiones in Argentina, to the Ivu organic farm, which produces a traditional yerba mate without additives under the same name, Ivu. As for pronunciation, it is read as "ibu" with a short u.
The farm also grows exotic (subtropical) fruit, but here we focus on its yerba product. It is grown 175 metres above sea level, close to the Paraná River, and processed using traditional methods, resulting in a mission-style, artisanal and organic product.
What sets it apart from other, more popular brands? Let's start with the retro paper packaging itself, which lets you enjoy a beautiful aroma and a slightly rough texture. These are details that, contrary to appearances, matter a lot for niche/craft yerbas and let us get to know a given yerba step by step - and that is exactly the case with Ivu Organica.
On opening the pack, the aroma is fairly mild, pleasant and light, with notes of corn, wood, hay and grain. And what does the content look like? The leaves are cut quite coarsely and have a nice greenish-grey colour. There are also thicker pieces of stems, and almost no dust at all. This makes it essentially a yerba for everyone, regardless of their previous experience with yerba.
We form a slope and pour in the water - how does it taste?
It is slightly smoky, fairly astringent, lightly sweet (creamy) and acidic, with a moderate bitterness, wheat-and-corn notes and a drying aftertaste on the tongue. The bitterness grows stronger with each infusion, spreading pleasantly across the palate. The infusion is interestingly complex, and the flavour is not flat - it changes over time and with each refill. Either way, it guarantees pleasant company for a good few hours.
In terms of energy, it is rather moderately stimulating, good for a less demanding or slightly more relaxed day.
Its yield is high, the leaves hold the intensity of flavour for a long time, and you can tell it is a product made with passion - which shows in the leaves themselves and allows for many hours of mate drinking. We are glad it has joined our range and hope you will like it as much as we did in 2021.
It is worth adding that the Ivu brand focuses strongly on organic farming, developing production systems that maintain and increase the amount of organic matter in the soil, using techniques that promote biological cycles and natural recycling.
