Yerba mate Ajedrez Premium 500 g
The second offering from the Ajedrez brand; until now we have only had the chance to try the Tradicional (traditional) version. Now it is time for the new, very coarsely cut Despalada, containing beautiful-looking leaves with a small amount of stems and almost no dust.
Ajedrez Despalada was originally labelled as a Uruguayan-style yerba, but for us Europeans that style is associated with a slightly different cut, where the leaves are ground much finer. It is now Despalada Premium, whose cut resembles Kalena Despalada, Arapegua Canchada or Fede Rico Aviva.
The aroma of the yerba can be described as dry, strongly nutty and grainy, hay-like, with a scent reminiscent of campfire smoke. The aroma itself is without doubt fairly intense and interesting. This may be due, among other things, to the fact that the yerba is naturally aged for 2 years after traditional processing.
The infusion has a solid flavour and effect practically from the first pour, delivering fantastic sensations for many hours of mate drinking. In the infusion we find plenty of bitterness and astringency, a puckering taste on the tongue, slight acidity and earthiness, and woody and grainy notes. After a while there are also some hints of black tea and light smokiness. It is without doubt a high-yield yerba, as it withstands refills without much trouble while we enjoy an intense infusion.
In terms of energy, it is without doubt among the strongly stimulating ones and can be an interesting alternative to, for example, Andresito Despalada or Taragui sin palo.
