Another new chimarrao in our range!
Estancia Chimarrao is a Chimarrao-type erva (yerba), one of the most demanding types to prepare because the leaves are very finely ground and in texture somewhat resemble flour. Here too you cannot do without a bombilla with a flat, round filter, the so-called bomba. The best choice are Brazilian stainless steel INOX-type bombas - Brazilians know better than anyone how chima should be drunk. However, this is not the kind of chimarrao most Europeans have in mind: the leaves are not ground quite as finely and have a different shade. They are greyish-green rather than the intense green of most chimarraos we know - a completely different yerba style, on the border between the Brazilian and Uruguayan styles.
It is unusual because of the way it is cut, quite similar to Elizabeth PN-2, where the ratio of leaves to stems is 60/40 rather than 70/30 as in Estancia. Another similar yerba is, for example, Yacuy Kelly - all 3 share a similar cut and similar flavours.
The infusion is fairly intense, slightly grassy and nettle-like, with a solid level of astringency and bitterness. It undoubtedly keeps its flavour for a long time and provides a solid energy boost for many hours.
When preparing it, building a mound is essential, otherwise it will be hard to sip :)
