Yerba Mate Canarias Tradicional – a Brazilian yerba with specific requirements
Yerba Mate Canarias is a Brazilian, or rather Uruguayan, classic. It contains a fairly finely ground and very dusty yerba, valued by many lovers of Paraguayan holly. The dried herb intended for brewing is packed in Uruguay, but comes from the Brazilian state of Santa Catarina. It is an excellent blend obtained from carefully selected, slow-growing Paraguayan holly bushes. Stems make up only a small part of it, usually around 1%.
The yerba consists mainly of finely ground leaves. For this reason, suitable accessories are needed to drink the infusion comfortably. A useful choice is, for example, a bombilla (the so-called bomba) with a flat filter with holes on both sides, or a good-quality straw with a spoon-shaped filter. As for the vessel, it is worth choosing one with a wide opening that allows the traditional preparation of Canarias Tradiconal. The intensity of Yerba mate Canarias allows it to be refilled many times until it completely loses its flavour, usually more than 1 litre with about 50 g of yerba, guaranteeing hours of top-quality mate drinking.
From the very first sip, it has an intense flavour with considerable astringency and bitterness. The infusion also has a light creaminess and grainy-nutty notes. Every fan of the Uruguayan style must try Canarias at least once, as it is undoubtedly one of those yerbas you simply have to taste.
For a better flavour, before brewing you can first pour lukewarm water over the yerba and only then brew it at the standard temperature for yerba mate, i.e. 70-75 degrees Celsius.

Among the many yerba mate varieties, Canarias Tradicional is one of the more original ones. Its characteristic feature is an intense flavour combined with a hint of sweetness. A surprising spicy aftertaste can also be noticed.

It requires the traditional method of preparation, the so-called mound. If you simply pour it in and add water, unfortunately you will not enjoy its flavour for long, because the bombilla will simply get clogged.
However, if the mound does not scare you, nor does the intensity of the infusion itself, you should definitely reach for it and try what a typical Uruguayan-style yerba tastes like from a respected and popular brand, which Canarias undoubtedly is.
