New in our range from the Tio Thomaz brand! Particularly close to us because of its origin. This chimarrao is produced by descendants of Polish immigrants living in the town of Áurea in the state of Rio Grande do Sul, whom fate brought to Brazil. They successfully run a company producing several interesting versions of chimarrao. This is the organic version, whose quality is continuously monitored and meets the high standards set by certification bodies. The aim of this process is to obtain the best possible product!
In this edition it is sold under the brand of the Polish Enclave in Brazil. By buying this product, you support both the producer from Áurea and the project itself, which aims to create a haven of peace for Poles in unstable times. The initiator of the whole idea/project is the New Better Life Foundation.
Erva Mate Tio Thomaz thanks to vacuum packing keeps the intense green colour of its leaves, as well as its rich aroma and flavour, for longer.
When you open the pack, you are hit by a strongly herbal, grassy aroma, remarkably fresh and intense, slightly tea-like and cereal-like. This is no surprise, as vacuum-packed chimarrao has a more intense aroma, a beautiful colour and a richer flavour than versions without vacuum sealing, whose flavour matures (changes) over the months of ageing. Here you have a guarantee that it will keep all its qualities for many months after production and packing. Still, remember to store the leaves after opening tightly closed in an additional container, away from light, in a dark and cool place.
Tio Thomaz Chimarrao is a Brazilian yerba consisting mainly of finely ground leaves with a small admixture of medium-sized stems.
To prepare it, you will need a bombilla with a flat, round filter with fine holes. The right preparation method is also essential. Otherwise, you will not be able to drink even a sip of the infusion of this green gold from Brazil.
When you open the pack, you are hit by an intense scent reminiscent of freshly cut grass; the aroma is strongly cereal-like and malty. After a while you can also detect notes of roasted sunflower seeds and nuts, an extremely rich and intense bouquet.
The first infusions have a pleasant bitterness; the brew is slightly astringent, intensely grassy, gently malty, nutty and dry. The sweetness is relatively mild and delicate, more of a background note. Besides the main flavour profile, in the background you can also taste hints of nettle and an aftertaste of roasted sunflower seeds or almonds.
With subsequent infusions the intensity rises gently, but not excessively. For most fans of Brazilian green gold, it will probably be a moderate level of intensity. This combination of aromas, flavours and intensity guarantees many hours of drinking mate. Every sip tastes great and encourages quick refills.
The leaves put up a lot of resistance to water, are very long-lasting and foam beautifully. It provides a solid dose of energy.
