Cinnamon has been known in Asian cuisine for centuries. In ancient times it was more expensive than gold. It originally comes from Sri Lanka, but it is also grown in other regions, e.g. in Madagascar. Ceylon cinnamon is its finest variety; in general, cinnamon is the dried bark of trees of the Lauraceae family, which also grow in India, Indonesia, Egypt, Vietnam and Brazil. Ceylon cinnamon stands out for its sweeter taste, lower coumarin content and stronger aroma compared with other varieties.
Cinnamon most often comes in two forms: ground and in sticks. Consuming it has a beneficial effect on the digestive system and blood sugar levels. It has strong antioxidant properties and also lowers blood cholesterol. It is an excellent source of fibre, iron, calcium and manganese. It has a positive effect on memory and cognitive function. It even helps fight acne. It has antibacterial and antifungal properties and also removes free radicals. Helpful in fighting colds and coughs.
Ground Ceylon cinnamon is often used as a spice for baked goods, milk-based dishes, apple dishes, mulled wine and beer.
